Ogura Toast Langue de Chat

This langue de chat transforms the famous Nagoya breakfast staple, Ogura Toast, into a delightful French cookie. Ogura Toast is a thick slice of toasted bread that has margarine or butter spread on followed by a delicious layer of ogura-an, a special type of sweet red bean paste. In this sandwich cookie, the two biscuits act as the layer of toast, and the white chocolate filling is infused with sweet red beans, which brings out the buttery and sweet flavor of its iconic inspiration.
Langue de chat literally means "Cat's Tongue" in French and gets its namesake from its original shape that resembles the tongue of a cat. In Japan, however, it is commonly baked into a square butter cookie with a white chocolate filling.
